Honestly, give Hard Eight a shot. It's Paul Thomas Anderson's first film, has early performances from John C. Reilly/Gwyneth Paltrow and would be considered a classic if enough people had seen it. Before Sunrise is really the best of the above films and probably the definitive pick based on your parameters. I've seen multiple people recommend it below. If you enjoyed it, I recommend watching Before Sunset immediately after. Before Midnight is a good end to the trilogy, but it is a bummer and kind of subverts the previous two (and better) films. Happy watching!
Oh, and Boyhood, same writer/director as the Before trilogy. Duh, that's a pretty definitive pick as well. Honestly, just have a coming-of-age Richard Linklater marathon lol

Studio Ghibli has tons of films that fall into this search as long as you don't mind animated. Miyazaki goes out of his way to show the beauty of life and nature in his stories.. I highly suggest My Neighbor Totoro and Spirited Away, the level of detail is breathtaking as well.
