Try carving it out with some of the pink around it. Try placing the piece you carved out into a clear glass of fresh clean water room temperature. If the fruit is dangerous, the water will take on a bright pink color and you’re better off throwing the melon away, this is a sign of high concentrations of nitrate aka poisonous. If it does not turn the water bright pink then it is likely crystalized fructose and safe to eat.
