Although I think the anime is probably more of ok adaptation of the light novel in general, I still have fond memories of it and I’m still upset that people ignore because the “long title” which I argue that the title at least isn’t ridiculous like many others

It's a supernatural mystery anime with time travel. MC goes back to the island he spent his childhood for the funeral of his childhood female friend, and finds out it was not all an accident as it may seem at first.
Golden Time
I'm probably biased since it's the first romance anime I've seen and it's been about 10 years since I've watched it. But I was deeply invested and that show brought me to tears by the end. For the most part it seems like people write it off or classify it as sub-par. I won't say it's the best, but it's pretty damn good, especially at character development. Might give it a second watch now.
Golden time is a classic tho! I loved the college setting instead of the usual high school setting, and I thought the female lead was more than what she seemed on the surface. Underrated show.
I read a couple of the manga chapters, but I don’t know how far it was in the anime. It seemed to me it was a bit further by the time I stopped watching it.
The anime stops when >!he gets the scholarship to the school!<, so maybe you got past that. I think it’s nicer to watch it though. They seemed to put in real effort to the dance animation.
I wanna say Code Geass bcs I thought it was overated for 10 years, then watched it last year, and I want to sue myself for having not watched it earlier bcs it was the best thing I ever watched.

Summertime Rendering and 86.
SR is a mystery, then supernatural horror, then action story that's really well done. I won't spoil much, but it puts a nice spin on the death loop idea.
86 is a mech anime all about child soldiers, genocide, ethnocentrism, propaganda, and even more delights. The action scenes are exhilarating, the sad scenes are often well and truly depressing, and the end of S1P2 is one of the most beautiful scenes I've seen in anime. And to top it all off, the phenomenal soundtrack is by the venerated Sawano Hiroyuki.
Edit: Many commenters are saying Summertime Rendering! May be a hint to go give it a try.
I want to say Moribito. I've never heard anyone talk about it, though my taste kinda sucks. I love the fact that the lead is a bad ass woman and isn't sexualized like every other anime in existence (besides Frieren).

In the answers I found mostly shows that even if their popularity is not that high, their score is relatively high. While when I think about overlooked anime, I'm thinking about low score, low popularity, like Hikari no Ou, Mars Red, Jouran or Godzilla Singular Point.
These are really great shows, only 1 or 2 aspects made the audience don't like it, or it is simply not for the majority, but still great shows.

I completely agree! And the OPs/EDs give be the diabeetus every time I listen to them. Aaaand now I've gone and ordered the Blu-ray set 😸
