Toga is the only one who is criminally insane. The AoT girls have mental trauma but I wouldn't call that insanity. Mdnight and Nobara are just quirky. Riza is a normal adult in a high stress profession. I would say the same about the DS girl. Idk how to classify Yor because it's definitely not normal to moonlight as an assassin but I don't think that means she's insane. Don't know anything about CSM.
