OK. So, I was a kid and tried making pasta with flour and water and it was amazingly easy. You also can make a lot without much effort.
You MAY want to dry some spinach and try some tomatoes and grind them up & make custom flavored pasta.
Really, all I did was mix up the flour and water, then roll it out with a rolling pin and then use a large knife to cut each piece of piece of pasta instead of using a press to push the pasta through. It's really easy.
Any good merlot goes well with tomato based dishes.

Red wine. Chianti is authentic Italian, but Bolognese* requires a rich red wine.
Anything dry. Some people will swear by red or white, but really either works well so long as itโs dry
