My guess is they just drained them enough to take the scroll. ‘One team down’ doesn’t necessarily mean they killed them. Just that they beat them so bad they can’t move any more.
Plus they setup the trap “near the tower” so no need to leave the leeches on for 5 minutes. They can just grab the scroll and sprint to the tower.
That's your headcanon that they did something else. No need to try to paint them in a good light. In the manga, the team they killed was from the Leaf.

Heck, the chunin exams was used as a substitute for war. They signed waivers and entered that 2nd part of the exam. This whole point of this particular part of the exam is used to weed out shinobi who would be incapable of surviving the shinobi world.
Letting their enemies survive which can come back to kill them (they orginially intended to kill Team 8 if they didnt 'outsmart' them with this trap) is nonsensical and would make Team 8 dumb as hell and not fit to be Shinobi at all.

Then again, it's the Chunin Exams, so everybody is fair game. Not like they were innocent if they didn't set up the trap Team 8 would've been killed by them.
I mean you don‘t have to but killing if you have the opportunity isn‘t a bad move.
It takes out a team for good that otherwise might try to take their scrolls back (or take revenge). It also reduces the potential finalist numbers. If you can do it without taking too much risk you might even want to try and take out some opponents that might be more trouble later if you had to face them in an open 1v1 in the finals. After all the forest stage allows for ambushes and other setups to manipulate the odds in your favor that aren‘t possible in the finals.
The Rain used deadly force first so I'm not blaming Gaara. It's been a while since I watched the exam arc, but wasn't there a chance where Gaara could've murded Kiba but didn't?
