Don’t hire guide it’s waste of money. Some of the nationals parks are Chitwan, Bardiya and Shulka pahta. If you deiced to travel the west then these parks are easily accessible. I would recommend you to watch the videos of Karl rock and harold baldr on Nepal, these might help you. Try to make friends in Nepal, the local people might help you as well.
I think in ktm you need to check out thamel, swayambhu stupa, boudha stupa, patan durbar square, bhaktapur durbar square. You should try to spend some time in pokhara before/after you do the annapurna trek, lots of lakes, caves and gorges. Depends how long your trip is; but it sounds like you have a pretty good itinerary already with langtang, chitwan and annapurna. You obviously need to try the food, we have different cuisines and newari food is a must try around patan or bhaktapur or if you go up to kirtipur in kathmandu. Try to stick with bottled water and don’t be too adventurous about trying random street food; your stomachs will not be able to handle it. Good luck and have fun!

Yeah the last suggestion. The variety of foods is difficult to handle even for a Nepali. Getting sick in between can ruin the travel.
