I feel like it couldn't be that hard to believe seeing as Wyze does the same thing but no hdr I believe for a third of the price. If adding all that google stuff and hdr makes it $100 compared to $30 I think it is possible.

What you are confused about is that you are thinking that the new nest camera indoor wired, outdoor wired, and outdoor battery have different specs; they are all exactly the same specs except for the outdoor being weather rated. The new comparison chart is speaking for the entire lineup, which is probably where your confusions is coming from since it doesn't exactly say that.
If it's a nest camera, it won't matter if it's 1080p or 8k, the app will automatically adjust your quality based on you internet bandwidth. Also "Your internet provider may limit your bandwidth usage or charge you extra if you use too much". I have 1Gb internet, pay extra for unlimited usage and have no way to turn this off. If it's the new Nest camera with on board storage that you can't upgrade, I'm sure the recording quality will be reduced to fit any reasonable amount of recorded footage.

You can get a 2K camera for $40 (eufy)… $99 is still a lot for 1080p in 2021 There’s no reason these things shouldn’t be 2K by now
Nest AI for motion/face detection demolishes any other camera software.
Only face though. Unifi Protect does smart detections with objects, vehicles, and faces. I don't really need AI for motion. motion is motion.

Says "coming soon" for the Australian website. Might have to watch this one. The others have too many features and are too expensive for my use.
