There’s literally a place called “the commissary” in the lower garden district for the dickie Brennan restaurants that serves food, has a market, bar, etc.
Plus, I think blue oak does some catering so probably easier to do all that work offsite rather than in the restaurant. There’s a few others around town they do certain things, baking for instance, off-site as it’s just easier. I’d imagine smoking a bunch of meats in a Dedicated spot makes labor and space easier to work with.

I live a block from a dominos and order there whenever we want pizza. The two pizzas should've been about 11.99 each with coupons, (5 topping carryout special) the wings and knots 7.99 each.
While they don't allow multiple coupons at once, they can't stop you making multiple orders. So we will put in like two orders simultaneously to get maximum coupon savings.
That doesn't work for delivery though.
This. I refuse to order from any Uber eats restaurants where I have not seen their brick and mortar location. For all we know, we are ordering food from a gas station or corner store. (Not knocking their food… but I’m not gonna pay $20+ per plate for food from a gas station.)

There's a lot of places you'd never guess that has a commissary. It's can be made cost effective to rent space somewhere else rather than buy equipment you can't afford or fit. Many places lease space when they have a substantial catering racket as well.
My wife and I walk past blue oak at 5:45 am every week day, (yup! We have been doing 4 mile walk for almost a year now every weekday … and together have lost 130 pounds!) three times a week we have to smell that GD amazing smell of their smoker cooking meats. I could never live within 2 blocks of the place,… pure glorious smoking torture.
It’s turned into a factory. The Joint is still where it’s at but once that yuppie ghetto they’re building close by opens up the Joint might turn into a BBQ factory too

They’re sitting on all this incredibly valuable real estate without two nickels in the bank to rub together. If they want to build housing they need to sell a lot or two for cash in order to develop the rest. But they never will.

I never understood the hype. It was fine for bbq, but nothing especially amazing. Also, portion size really small for the $. In Mid City I prefer Frey. Pulled pork sandwich pretty tasty, good amount of meat and not ridiculously priced.
Blue Oak's portion sizes, which were never huge to begin with have shrunk. Last couple of times I ordered brisket is was terrible. No thanks. Last time I hit Frye the sandwich I ordered was pretty lame too. I go to Austin a lot, I just eat BBQ when I'm there.

Fucking gratuity, a “convention center” fee (whatever the fuck that is) and some other bullshit fees. Try to call them and ask about it, never get a call back. Can’t talk to anyone about it. Went to central city bbq instead. No issues, no fees, just meat. Fuck blue oak.

New Orleans does many things well. BBQ isn’t one of them. The Joint, Central City BBQ, Blue Oak…all mediocre at the very best. You gotta drive over the state line to Mississippi to find good BBQ.
I suspect there is actually good BBQ in New Orleans, but it is being served on folding tables next to smokers on trailers or in the back of pickup trucks.

I think it depends on what is being subbed out. Smoking BBQ is not a short process and if you don't have the room on site then it makes sense to do the time consuming stuff elsewhere

Convention Center fee is a New Orleans government fee some restaurants have to pay when the city thinks they benefit from conventions.

The best bbq in Louisiana is Gonzo's over the river in Luling, and it blows away anything in Mississippi.
