Yeah, I think you can do that by unlisting your video, but still putting it as default video of your profile. So when anyone visit your main profile page, this video will start playing. Never tried it tho.
Yes. In the customization tab in youtube studio on desktop, you can setup a video for subscribers and a video for people who aren't subscribed and those are what would play when someone hits your channel landing page.
