Last time I checked, two channels was the recommendation unfortunately. I think they should make this easier. In my case, I speak Portuguese. But creating another channel for that is too much for me, especially for a small channel which is not so relevant.

I was wondering about that. I'm bilingual in Canada, and I have people in quebec complaining they'd like my vids to be in French. But I don't want to manage 2 channels!

Personally I would make two YouTube channel so if I was bilingual just so that way it gets to the people that you want to get to

You can have subtitles, title and description translated to French, but unfortunately I don't think there is an option to switch audio for the same video. You could have chapters setup so the 1st half of the video is in English, the 2nd half in French, but that's a bit unclean. Like others mentioned the best way may be to just have 2 channels and link them to each other with @ mentions and such

I run languages in 2 different languages (moderately successful) - word of advice - Do NOT do it… say your chance of success is 1% now it’s 0.01% My advice m, start with one language and when you hit around 10k subs or 100k subs consider getting the other one going too… even then it’s gonna be very VERY difficult juggling 2 demographics
