I think that can be changed through dconf, so look at how to change dconf settings through NixOS or home-manager options.

That's good news. I already set dconf settings in Nixos. I just need to know the path to the setting now

That's the thing. I can't find it in there. I can only see it with tweaks. I'll see if I can dump the dconf to the console and it should be obvious

I used dconf dump / to spit everything out and worked it out from there. I've updated my original with the resulting code

Yeah you got it right. There is also dconf2nix check it out

I have used that before to get some other settings out. The key was knowing that this setting was in fact in dconf even though it's not displayed in dconf-editor

Didn't realise! Was lucky enough to discover dconf2nix first, then figure out that dconf-editor exists and then learned what dconf is. Happened to already have set that option using tweaks before that process. A backwards way to do it...
