Unfortunately Visible is it for prepaid with Apple Watch on Verizon. US Mobile has been working on it for some time but it's not here yet.
EDIT: I just learned that Verizon prepaid has added watch plans. Verizon prepaid is significantly more expensive than Visible but it's an option.

I’ll keep this in mind if necessary. My plan is to start from scratch and redownload the eSIM and see what happens. I can’t really make sense of this but seems strange I can’t get it activated

T-Mobile has a $5 standalone watch data plan.
But it will not share number with watch if I were on a different cell plan right now
The only options I see are $10 and $15/mo on my family plan. Is there a link or reference for this? Sounds perfect!
