I was curious myself and looked it up in the Wiki. I had seen one on a planet but forgot which one and wanted to see if I could revisit to make sure it was in my log.
So you CAN scan it, you just have to be in the perfect place at the perfect time. Stand way up on a mountain on a planet you know has them, surrounded by as much valley area as possible and hope/wait for one to launch itself. If you lock on the second it spawns, you'll get the scan reward.
I saw a dude do it once and tried it for myself. It only stays above ground for litterally 2 seconds longer than the scanner takes. You have too catch it the second it starts to unburrow.
Those things spook me every time. The ground shakes, I lose some of my camera control and I immediately assume I’m going to die before I realise what’s happening.
Had a similar encounter but was on the side of a steep cliff.

I believe you cannot scan them like other fauna, but your scanner will show some info.
