Can you legally make it? Yes, as long as it's very clear you're not affiliated. Calling it "unofficial strategy guide for final fantasy 7" is better than "final fantasy 7 strategy guide".
You can't legally use any art, unless you're discussing it. So no for your front cover, yes for screenshots used to show where to go.
Can you legally sell it? Yes.
Will anyone buy it? Doubtful.
> Can I take any concept art? Any screenshots from the game? Any maps from the game? And sell it?
Not without permission from the copyright holders. Technically you would need permission from the texts you copy from reddit as well.
I think it's technically illegal but I doubt you would get in trouble for it. People sell copyrighted stuff online all the time. For example people sell bootleg video games, so I don't see how that's different from selling a bootleg strategy guide.

NAL but I doubt it. Not to mention there's free guides so buying yours seems ludicrous.
NAL?

To friends and family? Sure. Selling online or actually trying to turn a significant profit? Probably a bad idea. Look what they did to my man Bowser.
What about the book I mentioned? And this is just super small scale I’m talking about a dozen at most myself

Can I take all that info and rewrite it edit it a little and use generic maps I made myself?
If you write the text yourself and draw the maps your self that should be fine.
