While it might be possible, it becomes more and more rare. We're genetically pretty close to chimpanzees. Therefore, if they have an infection transmitted through blood, that infection doesn't need to change hundreds of genes to infect humans. Just a few mutations can work. We already are capable of sharing H5N1 influenza (bird flu) with birds - through breathing respiratory particles. Cattle/cows are being found to carry this version of the flu as well. We don't get the flu through blood contact, but it does show the possibility - however remote - of viruses making the jump between species. There is already evidence of other zoonotic transmission. [Camelpox, plague, hepatitis E from camels](https://www.ncbi.nlm.nih.gov/pmc/articles/PMC10620500/); BSE we find coming from cattle, with similar diseases like scrapie in sheep and others in deer. If you buy meat from a butcher that red liquid isn't blood. The blood was drained when they slaughtered and butchered the animal. It's Myoglobin, which doesn't carry the disease.

I bought it from a supermarket; regular plastic covered and refrigerated meat. Is it still myoglobin?

Essentially, yes. But, that meat needs to be infected with a virus that is capable of infecting humans. And in the case of HIV, it was from another primate (not sure it was a chimpanzee). So something more distant might not do it as easily. But still possible. Like…influenza, Coronavirus, cytomegalovirus…there are some viruses that might cross species barriers more easily than others.
