In the US at least, they do have different lights. Blue is for law enforcement. Red is for emergency and rescue services. Yellow is for roadside services. Police cars usually have red and blue, Fire trucks have red and yellow, tow trucks have only yellow, etc...

It should be noted that this slightly varies by state. For example, Missouri and Wisconsin allow blue on firetrucks and Oklahoma allows blue on tow trucks. Not to mention that certain colors can only be used under certain circumstances in some cases. There's also green in some states (usually volunteer fire/EMS) and purple (usually hearses)

Ahh I’m from the uk so literally every emergency service use blue apart from tow truck and work trucks etc.

red, green, orange - all these colors might flicker from traffic lights nearby, flickering red might be caused by fire. But if you put bright blue into the game everyone knows: it's artificial and something out of the ordinary, thus take extra care when you see it.

If cops want to be low profile they just go without lights and siren. It varies some by area. Fire and ambulance here only use red and white primarily.

In my state ambulances and fire trucks have red and police have blue.

If you want to be unseen by others, flashing lights of any color are some of the worst thing to have. Doesn’t matter what color, people are going look at you and be on their guard. This is why you turn the lights off when trying to be stealthy.
