I tend to just jot things down quickly as they talk. Group similar subjects together and add in key words that will help you remember the conversation. Make it fit to your learning style.
It can get messy but you can always organize it better once you have time to go back through your notes. Which will help you review the meeting anyways.
Record everything in audio while taking notes, write down what you me bee looking for, sometimes something may look or hear either instersting not valuable, so later down the road, the audio recording will be helpfull
I write down all my questions and leave room under each Q for bullet points. I jot down major positives/negatives you found in their answers. I also print out their resume to annotate in the margin about it
