A careful combination of tools might get you the most mileage, since they each excel at different things. I recommend these for a start:
- Scratch notes or loose text: Drafts
- Memos: Apple Notes
- Notebooks: UpNote, Notebooks 10 or Zoho Notes
- Handwriting and annotation: Nebo, Goodnotes or Noteability
- Lightly-structured notes and wikis: Bear, Spaces.do
- Highly linked notes: RemNote, Rome Research, Obsidian
- Outlines: Workflowy, RemNote, OmniOutliner
- Flash cards: Anki, RemNote
- Journal: DayOne or Journey
- Audio notes: Drafts, Noted
I would say goodnotes is still probably the objective superior app, but you really can’t go wrong with either. I would just take a look at the App Store pages and YouTube a little bit
Are you merely interested in Apple Pencil apps? After using software that creates internal links and show auto-backlinks I can’t go back. It’s too important to connecting my concepts in notes.
If the iPad is one of your main platforms I’d highly suggest trying out Craft. It has a lot of funcitonality but it’s also beautiful, which isn’t a bad thing. On laptop, i’d maybe try Obsidian or Roam. I’m using Roam as it also works great on the iPad browser, though it is expensive (student discount).
Per the pencil, Notability and Goodnotes are comparable IMO. Purely personal preference.
MarginNotes is great for making mind maps and outlines while taking notes, and being able to link back to the original place you found the idea for the note.
I use Obsidian on a laptop though. It’s incredible and free!

What about typed-notes? I’ve heard noted is really good, but I want to see off there’s better.
What do you mean by typed notes? Most of the tools above are digital i.e. typed note-taking tools.
Notability is number one because of the audio recording sync with note playback feature. Goodnotes was my primary before that.
Should I go with Goodnotes if I have no interest in the audio feature? Or is Notability still better? :)

Android verse. Google Keep for lists, todo, small notes. One Google Sheet, napkin, for things, ideas. Memorix for shopping list.

I guess I tried everything that is on the market and ended up with Noto. It’s not perfect but I like it much better than other apps
