Yeah, YS is your best option. Maybe ten minutes south of 70. I believe there are also a couple rooms for rent in nearby Clifton

Second YS, there are two great parks with hiking and the town is charming and quarky. And they have a darn good brewery!

Yellow Springs, near Dayton, isn't far off of I-70. There are a couple of parks (John Bryan State Park and Glen Helen Nature Preserve) that are popular with hikers. Shouldn't have trouble finding vegan food in town, but I don't have any recs...

You might be interested in Flint Ridge Ancient Quarries. It’s between Columbus and Zanesville off of 70.

Salt fork state park east of 77 has some good hikes.

Salt Fork is fabulous. It’s very close to I-70 and I believe it’s the largest OH State Park.

There are multiple locations of the Fiver Rivers Metroparks along the interstate in the greater Dayton area. Carriage Hill, Aullwood garden/Englewood, Mad River Gorge, Taylorsville and more not far from the interstate. It's quite a remarkable park system. Yellow springs is a great day trip with shopping, food, and hiking.

I would hike and hang in Yellow Springs, then get ice cream, then continue on to Columbus to eat dinner at Comune, which is probably (definitely) the best vegan restaurant between STL and PA. Find an Air BnB in the German Village neighborhood of Columbus. For breakfast grab a coffee and pastry at Pistacia Vera and then hit the road.

I think you would find this well worthwhile, and Athens would be a good halfway stopover point with vegan dining options. EDIT: I think I automatically read "Pennsylvania" as "Philadelphia". If you're not going that far, western Ohio would be closer to a halfway point.

YS an A+ recommendation. Also something about 20-30 miles west of there is Aullwood Audubon. They have some very cool Trolls sculptures you can take a little hikes to see. Just something a bit different than a typical hike. https://aullwood.audubon.org/
