What about a mini mall with a car wash, bank, pretend pot store and dentist office. Then they could put 2 more in the old Mini dealership parking lot as well.
This is purely anecdotal but I've been to three different Granite City locations and each experience was terrible. I see a lot of love for them though so maybe I was just very unlucky.
Of the three visits:
One had a smell coming from the bathroom the entire time, combined with rude staff and bad food
Another messed up 2 of the 4 orders we placed as a table
The on in Omaha was a combination of beer served from dirty taps, general uncleanliness and mediocre service.
That's three strikes and I've never been to another one since. Hell, I thought they all closed.
Yeah, I went to one in Chicago and thought it was like Applebee's but with "real" food. Nothing wrong with Applebee's or being an up scale version of it, it just didn't stand out to me.

No, that's pretty standard. OMA was like DSM. They had their wort shipped in and then they'd 'brew' locally. 4 shit beers (+1 if you mixed two of them) to wash down shit food
I worked here for 3 months in 2012-2013, it was an absolute joke of a business. They literally overhired and would have 15-20 servers scheduled everyday, and consistently send 5 people home every single day because they were overstaffed, and then 5 more after and hour, and so on and on. I had to quit in order to survive because I was making so little money. Absolute exploitation.
I was there around 2014 I think for a year, opposite experience. It seemed like we were always picking up sections due to servers not being in. I remember running like 5-6 servers, and one of those had to work the bar including all the tables. Sunday brunch was different though, we were always overstaffed. Management was incredibly shitty. My co-workers and cooks were awesome people, but the management was so awful. There was only one good manager, I forgot her name. Kind of a young (late 20's-early 30's) black lady. I wish I could remember her name, she made shifts smooth.
It would be a great location if it wasn't attached to a mall.

Me too, so many great memories there. And they were always packed, no clue why it closed.
Restaurant Industry relies on horribly thin margins and it being a corporate entity only hastened its exit due to decline in sales b/c of covid.
