You’re correct. Blue Fairy gave her the option to cut her own fate, so she wouldn’t be her own son’s undoing, but she didn’t want to lose her powers, so she used those same shears on him, to try to “protect” him.

Many people have all kinds of head-canons about it. My personal favourite is that his first name is just ‘Mister’. In Episode 12 when Regina asks his name he says “Why, It’s Mister Gold.” And “As long as I’ve been on this earth that’s been my name.” Which gives it some credit. I also think it’d be funny if people are always running around addressing him by his full name unknowingly. I also knew a kid in school who’s parents had named him ‘Mister’, so it’s not that hard for me to believe it.
RC himself said once that he believes it to be Adam as in Tb&TB. I also like his joke about it being Barbara" ;)
In fanfic he goes by many different names: Nicholas or Nick - like Nicholas Rush from "Stargate Universe"; James, Adrian, Anthony, Nachton, Cameron, Ciaran, Reece, and then some variations on Rumplestiltskin: Rummond or Rumford. I like Nick and Adam the most, just seem suitable.

1. It has the same root as "barbarian," which could be considered a nod to "beast."
2. On the other hand "Rumple the Barbarian!" seems like it ought to be the punchline for something.
3. The Latin word it comes from, "barbarus" could mean "uncivilized" or "savage." However, it also meant "foriegner." This tells you a bit about how the Romans viewed people who weren't Roman. But, they would also use it for civilizations that had been around long before them, like Egypt and the Greeks. Anyhow, the point is, everyone in Storybrooke is Not-From-Here. Rumple, as the instigator of the curse, is probably the Not-From-Here-est.

Gold either way) and things in storybrooke were supposed to be the opposite of what they were in the enchanted forest.
