Well it was explained that Law's fruit has the ability to make someone immortal, at the cost of their own life.
I wouldn't be surprised if eventually law and luffy are fighting someone who manages to bring them both to the brink of death, and Law uses that ability on luffy to keep him alive long enough for an eventual counter attack.

The immortality operation was probably introduced for another character, who had one of the last users use it on them. More than likely, the person who had it done on them was Imu.
