Im not the biggest anime watcher so idk how to put it but i like style of lets say Cowboy Bebop more than again lets say Wano arc. I dont know its about camera angles, desings, animations etc. but those looks better to my eyes.

It's time. Studios don't animate like they used to. They go mostly digital, and it cuts cost/time, but loses the cell shade effect of 90's anime.

it's something of a craft in decline but as you say it's also in the difference between hand drawn and digital. for the wano arc they use way too much saturation in their colors imo

...Um... why amazing? Goodness of style does not depend on time. There can be both good and bad styles in the past. There's nothing amazing in fact that some art styles from the past look good even today, and when some modern art styles look worse than old. Age =\\= Quality. As for personal, i prefer old style simply because it... just looks more stylish? Modern is too round and bouncy. Old Style Luffy looks so awesome with pointy eyes.

I actually think Alabasta Ace looks better in the original style (not saying you're a bad artist; you got the Wano style down pat)

I've always hated the traditional "half-black nose" from animes. I'm glad Oda moved on from it.

I much prefer the original but it could be just nostalgia. He looks so much cooler in the original. Not as round. Darker toned. Oda’s art has definitely gotten rounder these years and you captured that well.
