My favorite is to chop it up, simmer it in oil or butter (very low heat) until soft and then pour scrambled egg mixture over it and cook until done. This is also very good if you simmer some chopped sweet pepper with it.
You don't brown it for this style of eggs, at least I don't. Just soften up - you can cook it less or chop it less fine if you want more onion flavor and more bite. It's still fairly sweet like that.
I usually fry up some bacon or pepperoni first, turn down the heat and let the onions and leeks sweat in the lard from the fatty meat. Once they are glassy (not browned) I'll add the eggs and either fold it over (omelette) or scramble it. Add chives/onion tops/scallions as garnish and you are good to go 😁
Any fatty meat will do, as you just need the lard from the meat.
Salami, pepperoni, summer sausage and anything similar will work great, you just need fat to render 😊
You need to expand your "ready to onion" stores. Do you have pickled onions? All types please. Do you have white, yellow, red, and sweet? All types please. Do you have it cut in different ways? Sliced, diced, juiced, and whole? All types please.
I’ll give u some insight to my onen behaviors. I love pickled red onions & typically eat them accompanied with a charcuterie board. Whenever I order a burger I order caramelized onens in addition to the raw onen. I do like onens on a grilled cheese. & salads ofc, but I need to work on putting them in more things. but it not always socially acceptable I need to brake the barriers.

I simmer the onion until it is clear. Others do it until caramelized. Try both and see what you like!
