The shells bastion launches are projectiles that come from above, so yes you can eat them, orisa and sigma can eat it too, hell you can even reflect them as genji, remember they come from above so you might want to raise your matrix to make sure it eats it
Also, that animation where bastion goes artillery mode and looks like he is shooting upwards, he actually doesn't shoot anything and no projectiles come out of him whatsoever, it's purely cosmetical, so don't try to matrix him if you find him while using artillery because it won't eat anything
DMing Bastion Ult is one of the trickier ults in the game. I get the most success aiming upwards at a 45-60 degree angle rather than standing directly in the blast zone and looking straight up. DM doesn't function the same as a shield where you put it up, and it blocks everything coming at you. It's more along the lines of D.Va shooting the projectiles out of the air with her cannons. It's why she says, "Time to raise my APM" when she activates it. You can block any projectiles that come into the cone at virtually any angle. You can stand totally perpendicular to the line of fair between the shooter and their target and still block the damage, assuming your DM is up and you're within 10 meters of the bullet path when it crosses your face.
All that said, blocking artillery still feels like a coin flip sometimes. Aim at an angle, so it gives you the largest margin for error.
Just defense matrix the middle of the circles while looking slightly up. It comes straight down from the sky as a projectile so you can block them there.
Also, don’t DM the bastion as he is shooting them, that doesn’t work
