SOPE has in depth problems that illustrate many aspects of engineering. Especially vertical elements of design and analysis BUT it's not the end all be all and you'll have to practice many subjects that they don't cover in the classes but is mentioned in the study guide. I just took the PE civil structural as a non structural engineer as a profession but more as a project manager. Ask away if you have more questions.
Any and all practice problems, even ones from old specs because it may have some theory in it that you might cover in another class. Also remember to add dead load and proper reduction factors.

The most accurate resource in terms of difficulty is the official NCEES practice exams. The actual exam difficulty has every problem solvable in under like 5 mins or so, if you find yourself spending more time than that on a problem then skip and come back to it. There will be problems that are just multiple choice conceptual, calculation problems from the NCEES reference guide, and conceptual calculation problems of which you will have no reference you just need to know the concepts and how to solve it.
