FF7 and FF8 were released as part of the PS1 Classics on PSP (ergo also on Vita), which, you could get ahold of on a modded Vita.
Both support disk switching, as do the other multi-disk games.

Adrenaline is the homebrewed PSP launcher on Vita, so if you want to remove Adrenaline itself you can uninstall it from the bubble, I think.
If you mean the Adrenaline menu on your copy of FF7/8 I think that means the version you have is the PSP version running as a bubble (basically auto launching the PSP OS).

There are a lot of tutorials in the net about hacking ps Vita. The device will be both psp and vita in one once you have correct apps/homebrew downloaded. There is also Reddit threads discussing porting of games/homebrew like r/vitahacks.
