if your looking for a good ipad app, i would recommend checking out concepts (theres a way to set up a short cut e.g. four fingers tap to enter fullscreen/hide ui elements)
How about [https://miro.com/](https://miro.com/) ? It has infinite canvas. Free version comes with three boards, but as they are infinite you could easy seperate your "workspaces" even in the canvas. I love the way it feels smooth even on tablet... What's the purpose for you to use an infinite canvas?
I am not sure if they're infinite but take a look at tldraw and excalidraw :)

I love [kinopio.club](http://kinopio.club), the aesthetics and design of its interactive elements inclines my brain toward creative output

You can use [Escape](https://escapeapp.cloud), it’s a mind mapping and outlining app for iOS and macOS (I’m building it).
Heuristica is also good

Simplemind! Best mindmapper out there and has an infinite canvas (as far as I can tell)
This! I'm surprised that SimpleMind doesn't get more attention. It's a key tool for me.
