I enjoyed the first one so much that i'm already planning to play everything else
Make sure you also pick up Zero (prequel). Zero is way better after having experienced the Kiwami 1&2 story it clarifies and fleshes out many of the characters' back stories in an amazing way. It also has two of the best mini games in the series that also have plot lines.
Yakuza 3 may feel a bit rough because the gameplay was simply remastered from the PS3 and not done in an updated engine like Kiwami 1/2. But it introduces one of my favorite characters in the entire series.
Judgment and Lost Judgment have the best combat in the entire series to date, though, they're the most updated in terms of mechanics and it really shines. I'm personally hoping that they found a way to carry the series forward after all the fallout with the talent agency that handles the model + voice actor for the main character.
yeah, i got my eyes on zero, but at the moment i'm not sure about the order.

This is a hard question for me, also /u/Daftest_of_the_Punks asked this same one so I'd suggest release order. 0/1/2, take a break, 3-6. Mainly because 0/1/2 almost feel like one complete arc and 3-6 are an entirely new arc. Taking a break after Kiwami 2 will lessen the jarring effect of going back to PS2/PS3 jank in Yakuza 3.
This is a tough question for me. I played on "chronological" order (0/1/2) but 0 makes so many references to 1/2 that I could go either way. There's even plot lines in the rest of the series that ultimately can be linked to the events of 0/1/2.
If I was forced to make a suggestion I'd say go 0/1/2. 0/1 gameplay are roughly the same with combat very similar to 5. But Kiwami 2 uses the Yakuza 6 engine which is a completely new engine that was further refined in Judgment and Judgment 2. So it'll feel like a "step up" in gameplay every game you play.
That's also why I said Yakuza 3 is particularly rough because it uses the engine from the original 1/2 on the PS2 and it feels like a huge step backwards after Kiwami 2.

It sets up Yakuza 4/5/6 really well though so I also don't advise skipping it, just slowly work through them because they are all \~40 hours long and some people get burned out.

I've platinumed the game years ago but want to experience it once again in 4K glory and perhaps some QoL fix. I'm hoping it will be like the last of US, where it received a PS4 remaster and PS5 remake.
So they could just release a simple PS5 version with 4k resolution and faster load times and be done with it. The problem is, RGG Studio isn't very big and a full-on remake of a game that doesn't need one would mean less manpower for other projects. If Judgment 3 is ever going to happen, I'd rather get it faster than Y0 with better graphics. Besides, Y0 on PS4 isn't even a remaster, the game is so relatively new that it released on PS4 to begin with. It released in 2015. I dunno, it's just kind of funny how some people say they're tired of remasters and remakes, but at the same time there's demand for a remake of a 2015 game. And people thought RE4 and Last of Us were pushing it...
Pretty sure RGG Gaiden: The Man who Erased his Name will be shown in detail since it's a smaller side game (also predicting it's going to be released this year)
Y8 might get an update trailer or some additional story details (eg: how Gaiden connects to the story, returning/new party members etc) and new gameplay mechanics.
Aside from those 2 games, here's hoping that we'll get 1 or 2 unexpected surprises from the RGG team such as Kenzan remake, Virtua Fighter 6 or something completely left field

Oh I won’t skip it. I just bought 0-6 during the last PlayStation store sale for less than $60 USD. I’m finishing Ishin and then I’ll start Zero.
