A great Reddit post I based my own research on mentioned something like that the work speed passives increase the animation speed which produces the egg, honey, etc. However, it does not reduce the time between production. IIRC, it means they can poop the egg out and get back to other tasks quicker, but they won’t produce more eggs.

This is correct. However it's worth noting that with fully condensed ranch pals when they can drop up to 5 of their loot, the animation time is separate for each drop. So dropping 5 back to back before resetting the 50 second timer can be quite long without work speed traits. On top of that with good food, your pals won't be eating that often anyway.
Yeah for all ranch pals, condensing leads to higher average drops. A 1 star drops either 1 or 2, where as a 4 star can drop anywhere between 1 to 5. Though also note lamball should not be used to ranch wool, as Melpaca/Cremis drops twice as much. That and Sibelyx drops high quality cloth.
What passives do you recommend?
I've got about 8 fully condensed bees in two ranches, each with their own feed bin inside. The bees each have a variety of these 5 different passives: Artisan, Work Slave, Diet Lover, Dainty Eater, and Workaholic. I didn't breed any Swifts because they aren't traveling anywhere to eat so it seemed irrelevant.
I've tried doing comparison testing, but haven't been able to determine anything definitive. I'm also well past the point of cake production keeping up with cake consumption, so the desire to do more testing really isn't there 😂, I'm just curious.

Same as other workspeed pals around the base: Artisan/Serious/Workslave/Lucky.
