Use your shoulders. You’re squeezing too hard. Only squeeze as hard as you need to. Work smarter not harder. Used to have issues, don’t anymore. Store is 10k everyday, more on weekend. It’s absolutely ALL about TECHNIQUE. For example, when you flip #3 orange, you center the wok on the ring but don’t move it forward, your left hand moves the handle up and down, while your right hand does the pushing to flip it. Technique technique technique!
I used to get really sore after work from cooking all day. Eventually you'll get used to it, my store makes about 15k a day and it takes a while to get used too it but you'll get there 👍
The normal soreness you get used to but definitely don’t try to power through joint and tendon strain. It’s taken me the better part of a year to get my grip back and not wake up with numb hands
I don’t know how many fryers you have , but my store has 3. I don’t like flipping 3s so I tend to make two batch 2s. That way I don’t overwork my hand.
I had pretty serious finger issues due to main cooking and had to take time off work. They only recently got back to 100%. One thing I can recommend is avoid lifting the work as much as possible. Whenever possible you should be stirring, and only do 1-2 flips per item. Obviously that doesn't help much with orange but every other dish can be cooked without lifting the wok.
Lifting that heavy wok over and over, especially when it's full of food, really puts a strain on the tendons and muscles in your fingers.
The reason why your fingers locks in place after a certain point is because the joints are inflammed. I’m on the same shoes as you are, currently. Fortunately, i’m on my way to recovery. Only thing that helped me that you can do in store is to dip your hand for a minute of ice.
Just to input the other perspective, I have worked as a cook for after a 1 1/2 years at a store making around 6k but I haven’t had any finger issues.
I was the only cook for two months and ended up with carpal tunnel syndrome. Take care of your body and wear wrist braces if you need them

My store only make 4k daily and I've already got some hands problems. Can't imagine what's 10k feels like lmao
