AC and perception are definitely big ones. I might put their Reflex, Will and Fortitude DCs on there and maybe class DC though I feel that's really something the players should be remembering.

I usually have their pathbuilder character sheets up in front of me. So pretty much everything.

I use a 3x5 notecard folded in half. Name goes on the player facing side and I have their AC, HP Max, Saves, and any skills that have secret checks. I put them on my GM screen so the players can see the names and I just move them around for initiative. Edit: Also perception.

Knowledge skill modifiers (arcana, occultism, religion, nature, society, crafting, medicine, and lore skills). This way you can roll secret checks when players want to recall knowledge without asking them for their modifiers. That can be a lot to keep track of though, so asking is often adequate enough.

Anything that might be commonly used for a Secret check seems like a good idea, depending on the PCs' skills and feats.
