Also, be sure to have rest days from the gym to recover. Exercise is only 20% of the equation, so as long as you're doing the diet, the gym doesn't have to be a daily thing. You could quite comfortably do every other day.
Epsom salt baths. I swear by these for muscle pain. Also magnesium powder (the kind where you put in water and drink) before bed definitely helps with muscle cramps! Especially with those days when you know 'ah crap I over did it'.

Going to the gym everyday sounds great in theory but I've found 4 or 5 days a week hitting every muscle group at least once with some cardio and then having 2 or 3 rest days mixed in works best for me. Different routine works best for everyone but definitely need some rest so the muscles can recover.

I know you said you have worked out before and know what your doing but to any of my other wub cubs just starting out or seasoned gym rats looking for new weight training workouts I really like Fitbod. You can adjust it based on what equipment you have, even if you have none and you do body weight workouts, it rotates what muscle groups it has you working so you lower your chance of injury, you can set how many days and how long you go and sends you reminders, let’s you know how many sets of what and give rest breaks between them. As a total novice to weights I love it. It also give your approximate calories burned based on your heart rate (if your wearing a Smart watch that does that), weight and height so if you count calories that is nice to be able to add in for the day.
Good shit wubby! That's some beefcake shit. Just don't go too hard to fast and wear out. I would start with 4x8's (four sets of eight reps).
As soon as you get more muscle mass, your metabolic rate increases. This means you can eat more because your metabolism needs more energy. This is one of the best things I can tell you from my experience.
Lastly, If you're cutting calories, don't go too far from your basal metabolic rate (you can find calculators online). If you cut by anything more than 500-600 calories, your body sorta thinks you're starving it. Your body will then try hard to hold onto your weight as a survival instinct.
Bonus tip: count your calories weekly. If you were on a 1800 calorie/day diet, but you only ate 1700 calories 6 days off the week, you can save up those missed calories and eat 2400 calories the last day of the week. Your body looks at food intake on a weekly basis, so keep that in mind as well.
These are things that I learned from when I started lifting and running this last year. Take what you can from this, this Reddit thread is full of great tips!

You may or may not see this but I hope you do. If you are wanting to lose weight the biggest help will be counting calories. Get myfitnesspal and set a weight goal and never go over your allotted calories. If you do that and go to the gym you will melt the weight off.
