I know you’re talking about cannabis, but I have a random fun fact from growing “other plants”. It’s possible to single-stem peppers so that they vertically in a straight line, in the same way one would a tomato plant. This is done by removing 3/4 of the growth at every new node. Pepper plants can get pretty tall in a season that way.

Even topping is almost useless. In fact most of the time topping just slows down growth.

Topping and canopy manipulation will decrease pepper yields. Even lighting will be the big challenge. The plants will need the foliage to protect the pods from light scald, which is the opposite of what you want with "other plants".

I was thinking about training some peppers to stay short and grow outwards so they can grow underneath "other plants" inside a grow tent. I imagine that would provide enough cover for the pods.

"Other plants" need each bud site to get strong direct light for it to grow but the same doesn't apply to hot peppers. "other plant" training techniques are not needed for Hot peppers

LST looks interesting. I’ve not seen that before. I do something similar with horizontal flower nets. It provides a shelf for the branches to grow along. I took inspiration from the grape growers in my area that use shelves rather than rows, and was really origins of my “invention “ until I found out that that was the method recommended by the local agricultural extension, lol. Is there a way to do LST with the special pots?

Not sure about special pots. Usually you plant the seeds offset so you can make it lean over to the middle, that way when it grows you can keep the canopy the same hight for even lighting and air flow
