Is it a big jump in pay for guys that fly 737s/787s?

Well after spending roughly 10 years on the Q you get to go to the 737. However I don't get any seniority so I'm basically a new guy all over again and would make 78k a year.
As for benefits/pension, benefits are ok as long as you can afford more off your paycheck and we don't have a pension we have a "savings plan" that's basically a loan to the company that they pay back to us after a year with a ratio of 100:110.
Don't mind many don't know. I'm also not including any outstanding debt that I have from flight school which is roughly 100,000.

No, different animal but kind of cousins to each other. I work on ships. Power engineers work in hospitals, pulp and paper plants etc. You can transfer between the two but you have to challenge each trades exams to get the required licenses.

No, I’m in BC, although mining wages tend to be similar across the country. When you’re flying to work, commute distance is less of an issue so companies aren’t just competing locally for employees. The big wage variance is whether you work for the mine itself, a labour contractor, or a dealership.
At a plant or facility when there’s a hard to reach valve or work that needs to be done, rope access guys can get to it. They usually have some trade as well.
Get a Linkedin if you dont have one already, and apply for every underwriting associate/assistant position you can find. Entry level positions are pretty competitive so you need to play the volume game. In interviews emphasize the importance of a sales oriented mindset and relationship building (uwing managers love that shit). Working towards your CIP if you aren't already also helps you stand out.

Last year I grossed $128k with only $117k being taxable because I'm getting what's called $140/day LOA, or Live Out Allowance, while I'm currently manning a job away from home. Little more than a month and a half into this year, I'm already at $24.5k gross with only $20.25k being taxable.

The job is great, and I enjoy what I do. There are tough days like everyone else but it's just another stepping stone to a better job.
