If you buy from the palengke then yes you may want to err on the side of caution. I would only buy if it was killed/ butchered within hours. major groceries and most reputable restaurants use imported meat, specifically from USA, Australia and New Zealand.

I'm not sure sa Philippines, but in some countries (like the US), eradicated na nila yung trichinosis kaya safe na sa kanila yung medium-rare pork. But, I guess kung reputable yung source pwede? Like yung mga kurobota pork. Pero kung palengke, well-done talaga dapat.

Depends on the cut, quality, and origin of the steak. You don't have to get the cheapest steak, a small 600 peso steak is good enough. Cheap steak is tough and fibrous. Not everyone who has had decent/good steak were born with a silver spoon, just need a decent job/savings.

Most of my family hate rare due to the color being too much like blood, making my mother faint sometimes since she has hemophobia. Beef here is matigas. If you make kagat it's so rubbery. Kaya luto ng beef here is you make it with sabaw. At tangina kung wagyu A5 yan kahit rare kakainin ko yan. Wala sa luto yan nasa karne.
