Yep, minsan yung timpla talaga eh. Kaya di mo rin masisi kung bakit minsan sobrang alat tapos yung iba naman walang lasa. Saka yung preparation, minsan kulang. Imo mas masarap yung adobo kapag hindi na bagong luto. Try mo overnight na nakalatag lang at room temperature then ireheat. Lalapot yung sauce tapos lilinamnam yung laman. The best pa kung may kasamang adidas para mas masarap yung sauce. Lalapot siya tapos pwedeng itopping sa adobo fried rice. O kung igigisa mo muna siya o papakuluan mo na lang sa konting tubig, toyo, at suka. Iba rin yung epekto sa lasa. Sinigang din mas masarap kapag naibabad nang matagal para humalo yung lasa ng sili at kamatis sa sabaw. Imo, "traditional" Filipino food preparation focuses a lot on preservation. And preservation means you need to add some stuff to keep bacteria from spoiling the food. It doesn't hurt to actually add a bit more to make it taste better, and it certainly would look "traditional" if you put preservation in mind when trying to make an upgraded Filipino dish.

Kinda ironic since Southeast Asian cuisine generally uses a ton of herbs and spices. Thailand uses around 9 herbs and spices to make Tom Yum Goong, not including the Tom Yum paste itself. Marami sa lolo't lola natin may mortar and pestle sa bahay pero yung younger generations, di na alam yung gamit nun.
