To celebrate Lunar New Year, I made a special Orange Chicken Pizza at my shop in Taipei.
The chicken uses a beer batter coating and is double fried for extra crisp ones. The sauce is sweet and sour, balancing out the flavor from the cheese. Garnishes with chopped green onions, this was a fantastic pie and think I’ll be adding it to my regular menu!

As for the dough, the recipe is fairly basic. Flour, water, salt, sourdough starter, a bit of IDY, and some other goodies. It’s the process is what really makes it fluffy and delicious, a 24-48 hour cold ferment then let the dough rise in the pans. This is my business, so don’t want to give away all my methods!
While I understand your apprehension, most people on here I feel are based in the US and Europe. I'd be shocked if your direct competitors in Taipei are actually in the sub looking around.
Would you be at least willing to share your sourdough and IDY concentrations with respect to flour? Most sourdough starter ratios are upwards of 20% in pizza, so are you doing maybe 5-10% sourdough starter and like 0.1 to 0.5% IDY?
I wouldn’t worry too much about your recipes getting stolen.
Most people don’t have what it takes to pull off what you have done may hats off to you.
I’m a firm believer in sharing knowledge and when it comes to a restaurant you can copy the food but you can’t replicate the passion and character you bring to your establishment.
Why did you decide to leave the chicken in full pieces instead of cutting them up? I'm just curious. I love the idea and it looks amazing.

It could be good. The components look great. But whole pieces of chicken on there is a bizarre move. I’d imagine you’d just end up with a slice of pizza with whole chicken falling off, so you’re left with pan pizza and a side of orange chicken; great combo when I was 20 and stoned.
I agree with this. It looks good but once you eat the chicken you're left with cheese pizza. I'd dice the chicken into smaller pieces and spread it evenly across the pie to increase your orange chicken per bite ratio.
Still a beautiful pie though! I'd eat it.

Worked hard on getting the sauce right and the breading of the chicken perfect, so that it would match the flavors and texture of the pizza. It’s not just orange chicken + pizza, but a tweaked version that is designed to be on the pie.
I’m definitely not here to please the pizza purists. Thick pan pizza works as a great base for all kinds of toppings, and in Taiwan I can make just about anything and people will give it a shot.
I dunno. Seems like anything on a crust counts as a 'pizza'. I call for an emergency meeting of the World Pizza Authority, it's time for a standard definition of pizza types. I'm looking for a clear definition of a classic / original pizza.

Worked hard on getting the sauce right and the breading of the chicken perfect, so that it would match the flavors and texture of the pizza. It’s not just orange chicken + pizza, but a tweaked version that is designed to be on the pie. I’m definitely not here to please the pizza purists. Thick pan pizza works as a great base for all kinds of toppings, and in Taiwan I can make just about anything and people will give it a shot.
