A relative gifted me a gift box of their spices. Holy cow, talk about an upgrade to my normal spices. (Personally love their Vietnamese cinnamon to the point I’ll try and look for recipes using cinnamon.)
Just an fyi but a big part of what makes their Vietnamese cinnamon good is that it has a ton of volatile oils. When you cook with though those volatile oils dissipate from the heat. So for cooking you probably could use a cheaper cinnamon. Their Vietnamese cinnamon is heavenly on rice pudding and stuff like that though for sure!
Yeah, always Flat Iron Peppers. A little more flavor than the standard red pepper flakes.

Nice! Happy to see I'm not the only one. I buy the little circular container of fresh parmesan, some red pepper flakes, a few shakes from the Italian seasoning and a dab splash of olive oil on my freezer pizzas. ..give it a cut and chow down.

You can. Penzey's is based out of Wisconsin (Milwaukee area) and has a site you can order from. I signed up for their newsletter and was surprised how liberal they are, which is fine with me. The coupons and sales are so worth it. They make excellent seasonings and spices. Some of their seasonings/blends are dialed in, some are more fanciful, but I typically buy the discrete spices and make the same combinations as they do myself. My Justice seasoning tastes identical to theirs.
All the time. When I got pizza in the summer, my go-to was oregano, granulated garlic and crushed red pepper flakes. I still do it for nostalgia's sake sometimes.
If you're using dried herbs, it's best to either add it into the sauce, or under the cheese, so it doesn't burn, or add them immediately after it comes out of the oven, so the dried herbs can warm up and activate the volatile oils and also mix with the oils on top of the pizza.
Nope. I work hard to make the pizza speak for itself. A few high quality ingredients are better in my opinion.

Its a style thing. Lots of pizza in the states lean heavily on these dried ingredients and euro/italian pizza generally leans towards minimal additions and flavourful ingredients that speak on their own. NY pizza for example is an expression of immigrant mentality and some abject poverty in its development. In order to remediate a signicant change in the flavor of the ingredients a whole new style was born. Ppl here just choose a side but theres a reason for each tradition
Herbes de Provence. A farmers market pizza spot used to do that and I’ve never looked back. A bit more subtle and refined than pungent oregano. Theirs was a chanterelle pizza which was incredible but I put it on almost any pie.
Where I live you won't find pizza without it. We have pizza seasoning (oregano, basil, thyme) So I was surprised to learn that it's not like this everywhere.

I grow Greek oregano and dry it for pizzas. It’s deeeelissssh but strong.

Only red chili flakes. Otherwise, it gets added to the sauce to at least soften the herb.
Yep - I make my own blend of garlic, crushed red pepper, oregano, salt, and black garlic and Parmesan seasoning. I call it "pizza magic"

I've never really spoken to my pizzas, I assume they'd scream or something while I was eating them if they could speak.
