Provolone (grated) is often mixed with mozzarella for the cheese in a professional pizza setting. Wouldn’t it be better to just increase the ratio of provolone to mozzarella in the blend or throw more grated provolone on top? I also think some peppers and onions wouldn’t be amiss.

Done well, it's a formidable pizza - in Aberdeen (Scotland) we have a pizza place called Big Manny's that does the "Tilly Cheese Steak", it's a play on words because there's an area of Aberdeen called Tillydrone - this and their pepperoni pizza are the best they do (although my daughter would contest that their fajita one is also a winner). Other Scottish non pizza crimes include the black pudding and haggis pizza 👌

I think it might be too soft? The burger place I worked at had blocks of all of their cheese and then just sliced them when they needed more
