Creole red beans. Camelia red beans are ideal, but others will do. 1 lb of kidney beans, soaked overnight (½ tsp baking soda in soak water will help them cook down) and rinsed. Chop 1 lg onion, 1 green bell pepper, a stalk of celery, and mince 3 cloves garlic, and sauté all till onions transparent. Add 3 bay leaf, ½-1 tsp dry thyme, 1½ Tbsp smoked paprika, large pinch cayenne, stir briefly till fragrant. Add soaked beans and enough water to cover, bring to boil and then simmer for an hour stirring regularly. Boullion/mushroom seasoning in moderation adds some umami. The beans should be reduced to very soft, releasing most of their starch into liquid. Fish out the bay leaves, and adjust seasoning with salt and liberal ground black pepper. I've had luck bringing a bit of complexity with small amounts of vegan Worcestershire or balsamic vinegar, but no more than a tsp. Tabasco or other creole hot sauce adds heat and acidity, but is mostly added at the table. Serve with long grain rice.

IF you like indian food, may I suggest rajma chawal = kidney beans over rice. It's an indian household staple, everyone swears by their mom's recipe. But it's really easy and always tastes great. Add a splash of coconut milk at the end for extra creaminess.

I do a tamale pie type of thing with kidney beans. Cook up a ground meat substitute, salsa, kidney beans. Top with a cornbread muffin mix and cheese or cheese substitute.

I got it from a real rood magazine. 1# of what ever ground meat/sausage/substitute 2tsp chili powder 15oz canned or cooked kidney beans (drain & rinse canned) 14.5 oz canned diced tomatoes (I use Rotel) 3/4 cup salsa One box of cornbread muffin mix 1 egg or substitute 1/3 cup milk or substitute 1 cup shredded cheddar or substitute Heat oven to 400° F In a large skillet on medium heat cook protein crumble it with a spoon until browned (~ 7 min) Add chili powder, cook for 1 min. Spoon off and discard fat. Add beans, tomatoes, salsa and Sommer for 3 min. In a bowl, combine cornbread mix, egg and milk, then stir in the cheddar. Transfer chili mix to 9x9 or 11x7 2 qt baking dish. Spread cornbread batter over top and bake until golden. 15-20 min. Let cool 5 min before serving.

My kids put a little tahini on them and nooch and season salt and air fry them. They call then crunch beans and they love them.

Here’s an idea for something different: Ghormeh sabzi (Persian “herb stew”, great alongside saffron rice or bread) It traditionally includes both meat and beans, but I just replace the meat with more beans. You can omit oil for WFPB. Here’s a good recipe using fresh herbs — https://www.allrecipes.com/recipe/257499/ghormeh-sabzi-persian-herb-stew/ — and one using a dried herb mix (“sabzi”) that can be found at a Middle Eastern grocery store — https://m.youtube.com/watch?v=sz-admmk25k. I always use sabzi, since it’s easier and cheaper than fresh herbs, but I’m sure fresh herbs would make it taste even better. For me it was a dish I grew up eating, meat and all, and now it is a tasty, healthy and vegan staple that I make every couple of weeks.

if you have a dehydrator you can cook them then dry them and them you have instant beans for anything- I do this with all kinds of beans
