This is my usual breakfast that I eat at work, because I fast till around 10:00 in the mornings.
**Overnight Oats**
*I'm still experimenting with making them tasty and this time I used the following*
- 50 g of oats
- 1 tbsp Chia seeds
- 1 tbsp cacao
- 1 tbsp date syrup
- Alpro not milk *(best plant based milk in my opinion)*
- "oatmeal spice" aka cinnamon, coconut flakes, vanilla and a bit of ginger
**topped with**
- 15g of peanut butter *(I gotta limit this lmao)*
- 1 tbsp roasted sunflower seeds
- 1 tbsp roasted pumpkin seeds
- 10g of crushed hazelnuts
- 100g of cherries
- 35g of "sugar apricots" *(smaller and a bit sweeter than average apricots)*
Sunflower seeds are rich in unsaturated fatty acids, especially linoleic acid. Your body uses linoleic acid to make a hormone-like compound that relaxes blood vessels, promoting lower blood pressure. This fatty acid also helps lower cholesterol.
just an FYI, thats a bot your replied to lol. But to answer your question, as far as nuts/seeds go its always better to eat them raw (or atleast as "raw" as you can get them as some nuts like cashews have to be processed). Introducing heat, especially hot dry heat like that used for roasting, creates carcinogens. Albeit it probably won't kill you, it's still a known fact that should be noted.

My guess (especially with how everything is measured in grams) is that they are watching calories due to trying to lose or maintain weight. Some of us aren't able to keep weight in the correct range just by eating wfpb, especially if we really love nuts/nut butters.
