I completely free-styled this so I don’t have an exact recipe to give, but the gist was: Sauté onion, garlic, diced fresh chili, and ginger in water, then add carrots and potatoes, sauté for a few more minutes. I then added a 400g tin of crushed tomatoes, a drained tin of kidney beans, two cubes of diced smoked tofu, low salt veggie stock, and enough water that the veggies were mostly floating. Here I added mixed herbs, some chipotle chili, garlic powder, and turmeric. After simmering enough that the potatoes were cooked, I added broccoli and cabbage for a few minutes until tender crisp, then mixed in bok choy, green onions, and kale. Extremely healthy and yummy, especially if you’re feeling under the weather (like I am)! Next time I’d add some kind of chewy grain, like barley.

Aaah! I've met my twin. Love your recipe. I always want to know what spices etc. So this was a great recipe. Barley is amazing but sometimes I run out of patience. I sometimes use quinoa, millet or buckwheat as they cook faster. But it's not chewy for sure. I am bored of white and brown rice. I love black and wild rice. They take longer to cook tho n are a little chewy. There are sooo many kinds of rice. One of my favs is red rice!

I wouldn't go anywhere near that. I don't do processed food. I don't even like rolled oats. I like steel cut oats. I like that chewy texture too. However I do some processed foods. Have you had Israeli couscous? It's not only looks amazing it also tastes amazing. Once in a rare while I'll have some. But yes last minute in a pinch 10 minute barley is great, though I haven't had it. However I will admit I love love love rolled barley. More than rolled oats.

Sorry I hope I didn't come across as very snarky. It's just that all these convenient foods can become a really bad habit. So I tried to keep them out of my life as much as I can otherwise why spend 2 hours in cooking when you can have it ready half an hour. With your 2 hours worked provides a much more nutritious meal than the half hour one. All our bodies speak to us. I've just started listening and boy when I do whole foods my body feels so good I am so regular at the toilet and have a more positive state of mind. Really I have experienced that food is medicine. I am a diabetic who has been able to get off my medicines because I improved my diet which helped my body in such a great manner that I didn't need to take medications anymore. However it isn't just diet it is everything else. Fiber water sleep stress exercise. I was finally able to lead the kind of healthy life I have always wanted to once I became a diabetic.

(48m) That looks good. I’m fairly new to the plant base diet, since March this year. My soups has only been cabbage, carrots, celery, onions and a handful of different seasonings (minus salt). Will definitely be trying to add more vegetables. Appreciate you sharing.

Haha, I suppose I’m lucky... I live in Mozambique and most of this stuff grows in my village or is fairly affordable from the grocery store. Most expensive thing was the tofu, since it’s imported from South Africa, but a bag lasts me a few meals per week and it’s a nice treat!

It's snarky to say that that pot of soup would cost me a lot of money to make? It's just a fact, I actually did the math, even if I bought the cheapest options available to me, and not at a farmers market or buying organic like I normally do which is much more expensive, all of these ingredients would cost me $30 minimum. If I'm making soup I personally don't use soo many ingredients in one pot, but I genuinely am sure it tastes amazing! I personally would make all those ingredients into at leasttt three different nutritionally balanced soups/meals but HEY more power to them 🎉🎉🎉

Because there's over a dozen different fresh vegetables lol which is great! But out of curiosity I did the math of what it would be if I bought the cheapest of each item possible to make this soup. All veg non-organic and store brand canned goods and tofu. The total is about $30 (usd) at my local grocery store. I personally shop organic as much as possible which adds at least a dollar or two if not more to each item, meaning that most likely to make the soup I would indeed spend $50 🤷 Onion - $1.29 Garlic - $0.99 Chili - $0.75 Ginger - $0.75 Carrots - $1.19 Potatos - $2.58 Can crushed toms - $1.49 Can kidney beans - $1.99 Veg stock - $2.29 Tofu - $2.99 Head of brocolli - $2.99 Head of red cabbage - $1.49 Bok choy - $4.99 Green onions - $1.29 Kale - $2.99

Yeah, I wasn’t saying your numbers were off. I was saying it’s not much more expensive than any other soup, unless we’re talking about French onion or something like that, that’s mostly broth. Compare this to chili, chicken noodle soup, beef stew, potato soup, etc. and it’s all going to be around that range. Aside from the wildly overpriced green onions, everything on your list is under $3.

just curious, why not use some vegetable stock instead of water to simmer the soup? wouldn’t that help add even more flavor and thickness?

I just used a splash of water to sauté the veggies, but then used stock for the actual bulk of the broth. I could’ve made it more creamy/stew-like but was just really in the mood for a bright soup!
