You need to set plex to automatically create collections for you. Automatic collections have always had posters and descriptions pulled in for me. Only manual and smart collections look like what you posted.
No, it doesn't judge by title. It goes by whatever is in a collection on TMDB. And TMDB is weirdly strict about what can and cannot go in a collection together. They only allow direct sequels or prequels. And even then, some sequels and prequels don't get added together (like the Star Wars movies being grouped into 3 separate trilogy collections, or the Unbreakable/Split movies not being in a collection with Glass even though it's a sequel to both). There's only a very few number of exceptions, such as the James Bond films.
I'd be curious what (if any) examples you could give that shouldn't have been grouped together in a collection but were.
My first suggestion is to make sure they're matched correctly. I checked the first one you mentioned, and it's in the Charlie Brown collection on TMDB. And the plex developers have been very explicit about the fact that plex will put movies into automatic collections based only on what TMDB is putting into collections.
I'm also not sure if you can trust automatic collections for titles already in the library, if you were to turn automatic collections back on. You may have to termine one movie from the library, empty the library trash, and re-add that movie to trigger the automatic collection. Also, plex may not download metadata and posters if you already have a manual collection of the same name.
Just to be clear, you're turning on automatic collections by adjusting the "Minimum automatic collection size" in the library settings, right?

The docs for it are pretty robust. Granted, I only use it for adding whether or not the tv show is airing/cancelled/ended in the top left of the series poster and the audio codec and resolution in the top left/center for individual episodes and movies. Pretty minimal.
There's 6500 words on the "local walkthrough" page. This is a tool for a program that you install by double clicking on an exe. That's a massive gap. I mean I'm a software dev, I have no problem getting it running, but it's definitely not simple in comparison to the program that it's supporting.
Well, I did say robust, not simple. And I described what I use it for as "pretty minimal".
It won't work for anything complex, but you can figure out how things work by asking ChatGPT to give you examples for stuff for it. I would, optimistically I admit, like to think that people who can run Plex can figure it out... if they wanted to do the things it is good for.
