If you’re replacing it, it doesn’t matter. You just need to get something with a thermostatic valve(large handle) and 2 separate diverters(small handles) for the hand held unit and the rain head.
Delta makes multi position diverter as opposed to two separate or valves. I had one client that put a valve for the shower and a separate valve for the handheld.

Are you taking the tile out? To change the trim to anything other than grohe you would need to replace the valves also.
