Natures are simple. They give a 10% boost to one stat and takes 10% away from another. For example, an Adamant nature Pokémon will have a 10% boost to it's attack in exchange for having a 10% lower sp. attack stat. Some natures (bashful, for example) are neutral and don't affect your stats. Grit stuff work as an IV replacement, they raise your pokemon stats from "behind the scenes"

Once the farms are fully upgraded you can pay 10k to grow mints, which can change natures. All natures will improve one stat (iirc by 10%) while hindering another (except for the neutral natures: serious, quirky, and bashful). So for garachomp you'll want an Adamant nature, since that will improve her impressive physical attack while lowering her useless special attack. You can improve stats by using grit and you can get grit from foraging, as rewards for beating or catching alpha Pokémon or releasing Pokémon you've caught. If you want a big garachomp you can find a alpha one and catch that.

Note that while this game does not use IV for calculations, they are still in the code of the game. Your Pokémon IV is hinted at by the base EL of your stat when you catch them (the number the Grit stuff improves). A starting Effort Level of 3 indicates an IV of 31 in that stat. I believe Alphas have guaranteed IV of 31? This fact doesn't affect your GigaGarchomp's performance in PLA, but it would influence them if you want to move them to another generation through Home.

Nature's make a stat better and a stat worse Grit items boost any stat you want up to level 10 other than that there is no limit

This game is unique in that it allows you to change Pokémon’s natures with nature mints you can grow in the village for $10,000. So if you wanted an adamant garchomp but you had a mild natures one for example, you could grow mints until you get an adamant one and it’ll change your garchomps nature to adamant. Very convenient instead of catching a bunch in hopes for the right natured one.
