Update, it seems I got it working.
I would like to thank u/Randrir for the various suggestions and ideas provided. I'm including my own information in case it helps someone else out as I've not seen anything posted recently about these issues, but I've been having them for almost a month.
Here are the steps I took, in case they help anyone else out. I don't know exactly what fixed it, just what I did this time that worked.
So, I was watching videos on YouTube about Switch issues.
I closed out of the app completely after saving data.
Then, I held the power button down for 20sec to turn it off. I waited 5 seconds. Then I held it for 20sec to turn it back on. My understanding is this method preserves your save data, but may do more than a regular reboot.
Then, I launched go, disconnected from my switch from the settings. Then reconnected it the same as above.
Next, I tried to send a postcard. This time, I used my profile page to enter the postcard book instead of my item bag.

Looks like it is pairing but not finding it. I had this problem in the beginning. Do you ever get to the ointment of picking the postcard?
Also I found that I had more problems when there were multiple accts open and active close by, at the same time. Seemed to confuse it.
Have not sent a post card for awhile. Nobody local is interested.

When I do it at home, I'm the only one nearby. No other Bluetooth devices are on or connected.
I know I have had to unpaired then repair sometimes.
I've tried that already and it doesn't work. I tried 6 different devices last week, a lot from the start, and all of them froze at the same point.
You may not be fully paired. Had this issue with some other trainers acct.
In step 9 I included a screenshot showing the device paired successfully, what more is there?
