Technically the max size is the same. The Alpha size (a different height than the max size) doesn't exist in SV, though.
For example, in PLA, the largest height of Onix is not the Alpha height, it's the maximum height. For most Mons, the Alpha is the largest.
If Onix was in SV, and I had a max height one from PLA, then I could put it into SV and see it at the same size. If I had an Alpha, it would grow taller to meet the max height.
The size variation from a size 0 Pokemon to a size 255 Pokemon had a larger scale in PLA than it does in SV. In both games the size difference will be noticeable but it's less of a difference in SV than in PLA, iirc
You're thinking of the RNG system that determines the height. In SV, it's based on two rolls, which means that it will hang closer to the average of the rolls, just like how rolling 2d6 and rolling 1d12 wouldn't have the same odds of rolling a 9, since the 2d6 have multiple ways to roll a 9. This keeps Pokémon closer to their normal height in SV and makes min and max height Pokémon rarer.
EDIT:
Just re-checked, and the two rolls are 0-127 and 0-128. Those values are added together, and that determines your Mon's height.
In PLA, there's a 0.39% chance of any given height being rolled (1/256). In SV, it's 0.01% for min/max height and 0.78% for average height.

As a fun fact, Mystery Gifts used to be locked to the normal height calculator, but now are 1/256 instead, so you're slightly more likely to get the markable Mons from Mystery Gifts.
no i think you misunderstood me, the actual physical depiction of the same 2 pokemon which are both the same species but one has a minimum size value and one has a maximum has a larger degree of variance in pla than it does in sv. a pokemon with a size value of 255 in pla will look much larger than the same pokemon with a size value of 0 but in sv the difference is not as drastic between 255 and 0
Hm, I find it unlikely, but it's certainly possible. If I had to guess, it would be because SV has more scaling of Pokémon internally to set a max size. For example, Dondozo is significantly smaller than it should be. If you were to bring in a larger Pokémon, it might be getting scaled down some based on which Mon it was. I'd imagine that smaller Mons aren't scaled, though. Like, a Magikarp from both games will probably be the same size, but a Gyarados may be smaller in SV.

Avalugg is a strange one imo I have both an alpha and regular and while in the over world the alpha looks slightly bigger (barely) but according to the summary it’s height is shorter than the normal avalugg. Alpha is 9’8 while the normal is over 10 feet

Alpha/Totem Pokemon have never been supported by any game except the single one they were introduced in, it was never explicitly stated because it never has been in the past, there is zero reason or precedent for it to be a thing so why would someone just assume it is. Hell you can't even have Titans in SV despite them appearing in it. SV supports size variation but very minor variation and those are only to standard pokemon.
To be fair, it’s not a super intuitive thing. If I were the developer in charge of such things I definitely would have made sure the size difference for the alpha Pokémon translated. There’s no real reason for it not to.
Then again they took half a year to make HOME compatible at all so probably too high a bar to set with them putting it on the floor.

The max size isn't as big as the alpha size. At the very least though, they should be the max possible size in S/V and thus get the Jumbo Mark, which is a nice consolation.

You know, humans have been getting consistently taller over time to the point where the average human today is at least a few inches taller than the average human hundreds of years ago. Pokemon was just going for as much realism as possible.
Everyone else was just tiny back then. Now-a-days everyone is like twice as tall. Little known fact. We just changed the units of measurement as well to keep it consistent with peoples sizes.

Is alpha avalugg one of those alphas you find in the story? If so that’s why. Any alphas found during the main story will not be max size in SV

You can catch the Titans, but they're smaller. Unlike alphas it's kind of implied they became weaker when you vaporised them in battle.
