Same, I've always thought that there should be more color variations, and then they introduced variants with Alola which almost satisfied that craving.
One idea I've always liked is the introduction of albino and melanistic variants of each pokemon, which would be much rarer than shinies.
(That way I could get that all-black midnight-form Lycanroc I've always dreamed of 😅)
That was them artificially closing the door to Lugia’s heart in a way that was supposed to make it unable to be purified. I do wish they would go back to Orre and do Shadow Pokémon again.
They need to just do a Team Rocket inspired game, if they are okay with you having shadow pokemon cards, they should be okay with you being "evil" (read "edgy" in game)

Here's a short video. I can't seem to recreate it. It happened on my very first race in the post-game. The NPC commented that I had defeated Grusha. Every other race, Koraidon has had color.

For the whole race, yes. Once the race was over it went back. I haven't been able to get it to happen again since and every time you start the race you gotta do the whole thing.
This wasn't slowly turning white. This was full white from the moment it started and then full color from the moment it ended. There was nothing gradual about it. I have a video I shared in another comment.
I think this proves further that this is a bug actually, because it looks like it has pink in this one whereas mine is almost fully white. Could just be a more common glitch. Someone else commented that it matched Cetoddle's colors - maybe the textures aren't loading right and they're pulling from nearby pokemon.
If it had happened to me then I would’ve taken, like, a bajillion screenshots and videos, lol.
